Tri-Colored Roasted Potatoes

1 lb each of red, russet, and sweet potato
¼ cup olive oil
1 tsp. black pepper
2 Tbsp. minced garlic
2 Tbsp. minced parsley
Cut potatoes in half or quarters and place in bowl with olive oil, salt, pepper, and garlic.
Toss to coat. Put on baking sheet in single layer.
Roast in 400 degree oven 45 minutes to an hour. Flip twice during baking.
Remove from oven, toss with parsley and seasonings.
