Cream of Wild Rice Soup

2½ cups cooked wild rice
1 large onion diced
1 cup celery diced
1 4oz. can sliced mushrooms drained
½ cup butter
1 cup cooked and diced chicken
¼ cup flour
3 cups chicken stock or broth
2 cups cream
Salt and pepper to taste
Sauté onion, celery, and mushrooms in butter about 5 minutes.
Sprinkle in flour and stir until mixed – do not brown. Slowly add chicken stock, stirring until well blended. Add chicken and rice, and season to taste. Stir in cream and heat through. Do not boil.
