Bacon Chicken Ranch Casserole

2 lbs. chicken (or turkey), cooked and cubed
1 (10 oz.) box Rotini Noodles, cooked
7-8 slices bacon, cooked and chopped
3 cloves garlic, minced
2 Tbsp. flour
1 cup milk
¾ cup Ranch dressing
3 Tbsp. butter
2 cups Mexican cheese blend
1 (4 oz.) can of chopped green chilies


Preheat oven to 350 degrees.

In a saucepan, melt butter and add garlic. Cook until garlic is translucent.

Add flour and milk. Cook until well mixed.

Add the ranch and cooked chicken; mix well and let simmer for a few minutes over low heat until the mixture is slightly thickened.

Add 1 cup of cheese, the noodles and the green chilies. Mix until well blended.

Transfer to a large casserole and sprinkle with the remaining cheese.

Bake for 30 minutes until cheese is melted and the casserole is heated through.
