Chocolate Lovers Turtle Waffles

2 eggs, separated
1 ½ cups buttermilk
½ cup vegetable oil
1 ¼ cups flour
½ to ¾ cups cocoa (the more chocolate the more bitter they may taste)
1 Tbsp. baking powder
1 Tbsp. sugar
1 tsp. salt
Cooking spray for the waffle iron
 

Separate eggs. Put whites in a small bowl. Beat to soft peaks.
Place yolks into a medium bowl and mix until sunny yellow colored.
Add milk and oil to the yolks.
In a large bowl, mix the dry ingredients together and then add the yolk mixture.
Fold in the egg whites by hand.Spoon batter into a waffle iron and cook until done.

 
Filling:
1 (8 oz.) container whipped cream cheese
1/3 cup powdered sugar
¼ cup caramel topping
 

Mix together the whipped cream cheese, powdered sugar and caramel topping until well blended.

 
1 can Reddi whip topping
2 (5 oz.) bags of chopped pecans
2 chocolate chips for eyes
4 whole pecans for feet
 

To make a turtle waffle:

Take a cooked waffle and spread cream cheese mixture on top.

Make a round head out of the Reddi whip for the turtle’s head and add 2 chocolate chips for eyes and 4 whole pecans for the feet.

Drizzle with additional caramel if desired. 

Can also just spread the cream cheese on top of a cooked waffle, sprinkle with chopped pecans and drizzle with caramel.
