Shrimp Gumbo

1 cup onion, chopped
3 garlic cloves, minced
1 tsp. oil
½ lb. kielbasa, halved and cut into ¼” slices
1 ½ cups green pepper, chopped
1 can (14.5 oz.) diced tomatoes, undrained
1 cup chicken broth
1 bay leaf
1 tsp. Italian seasoning
½ tsp. salt
½ tsp. chili powder
¼ tsp. pepper
1/8 tsp. hot pepper sauce
¾ lb. uncooked medium shrimp, peeled and deveined
1 cup uncooked instant rice

 

In a large saucepan, sauté onion and garlic in oil for 2 minutes or until tender-crisp.

Stir in sausage; cook and stir for 2 minutes or until sausage begins to brown.

Add green pepper; cook and stir for 2 minutes or until tender-crisp.

Stir in tomatoes, broth, seasonings and hot pepper sauce.

Bring to a boil.

 

Cook, uncovered, for 2 minutes or until heated through.

Stir in shrimp. Cook 3-4 minutes longer or until shrimp turns pink.

Stir in rice.

Remove from heat.

 

Cover and let stand for 5 minutes or until rice is tender.

Discard bayleaf.
