A Caesar of a Different Color

2 Tbsp. olive oil
1 clove garlic, peeled
2 heads romaine, cut
¼ cup chopped green onions
½ cup freshly grated Parmesan cheese
½ cup crisply fried bacon, crumbled
1 avocado, diced
Pour olive oil and a sprinkling of salt into a large wooden bowl. Rub the garlic clove firmly into bowl.
Remove garlic clove and place tomatoes, green onions, and avocado in the bottom of the bowl.
Add romaine. Top with bacon, cheese, and croutons.
Juice of 1 lemon
¾ tsp. Dijon mustard
¾ tsp. Worcestershire sauce
1 garlic clove, pressed
½ tsp. sugar
½ tsp. black pepper
¼ cup mayonnaise
½ cup vegetable oil or ½ cup olive oil
¼ cup fresh parmesan cheese, grated
Mix all ingredients. Toss with salad just before serving.
