French Silk Pie

1 cup butter
1½ cups superfine granulated sugar
4 1 oz. squares unsweetened chocolate
1 tsp. vanilla
4 eggs, room temperature
1 9” pastry shell, baked
The use of a stationary mixer is recommended for this recipe.
Melt and cool chocolate. Beat butter and sugar in a large bowl until smooth and fluffy.
Beat in chocolate and vanilla. Add eggs, one at a time, beating with electric mixer at medium speed for 5 minutes after each addition. Pour in pastry shell and chill overnight. Garnish with whipped cream.
(superfine sugar can be made by processing granulated sugar in food processor until almost powdered)
