Spinach and Apple Salad with Warm Lemon-Bacon Vinaigrette

6 cups baby spinach
1 apple, thinly sliced
½ cup thinly sliced white onion
½ cup freshly squeezed lemon juice
2 tsp Dijon mustard
2 Tbsp sugar
½ tsp coarsely ground black pepper
¼ tsp salt
2 Tbsp extra-virgin olive oil
¼ cup finely diced raw bacon
2 tsp minced fresh garlic

Place spinach, apple and onion in a large, heatproof bowl. Refrigerate until ready to dress the salad.
In a small bowl, whisk together the lemon juice, mustard, sugar, pepper, salt and olive oil. Set aside.
In a small non-stick pan, cook the bacon over medium-high heat until almost crisp, about 2 to 3 minutes. Add the garlic and stir for about 30 seconds, making sure not to brown the garlic. Remove the pan from heat. Stir in vinaigrette and pour over spinach mixture. Toss until salad is well coated with dressing. Serves 6.
