Knoepfla Hotdish

4 C. flour
2 tsp. baking powder
2 eggs well beaten
1 tsp. salt
1 cup warm water
Potatoes (as many as you prefer)
1 lb. bacon
1½ cup heavy whipping cream
1 Tbsp. dry chicken soup base
¼ cup butter cubed

Mix flour, baking powder, eggs and water to make knoepfla dough. Let dough rest for at least 1/2 hour. Meanwhile bring peeled and diced potatoes to boil in about 4-5 cups of water with 1 tsp salt added. When potatoes are soft, cut the dough into small pieces and drop in with the potatoes. Cook about 8 minutes and drain.
While the knoepfla are boiling, fry bacon, cool and cut into 1″ pieces. Using cooking spray, prepare a 9 x 13 casserole dish. Put potatoes, knoepfla, and bacon into dish. In microwavable cup, heat cream for 1½ minutes. Add chicken soup base to cream and stir until dissolved. Pour over the mixture. Dot top with cubed butter, cover with foil, and bake at 325 degrees for 1 hour, removing foil after first 30 minutes.
