Crazy Good Casserole

4 boneless, skinless chicken breasts
6 strips quality bacon
2 cans cream of chicken soup
2 cups shredded Monterey Jack cheese
1 box (16 oz.) dried spiral pasta
1/2 Tbsp. garlic powder
1 cup diced onion (optional)
Salt and pepper to taste

Cook bacon until crisp. Remove from skillet (reserve drippings) with slotted spoon and crumble.
Cut chicken into bite-size chunks and cook in bacon drippings, (along with onions if desired).
Add garlic powder, salt, and pepper to taste. Spray 9 X 13 pan and preheat oven to 400.
Prepare pasta according to package, drain and return to pan. Add chicken, both cans of soup, and 1 cup Monterey Jack cheese. Stir to mix. Pour into prepared pan. Top with remaining cheese and crumbled bacon. Bake at 400 degrees for 20 minutes.
