03/07/2016 Buttermilk Biscuits

2 cups flour
2 Tbsp. baking powder
½ tsp. salt
1/8 tsp. baking soda
1 cup, plus 2 Tbsp. buttermilk
¼ cup oil
In large mixing bowl, combine flour, baking powder, and salt.
Add baking soda to buttermilk. Add to flour mixture and stir just until moistened.
Turn out on lightly floured surface and knead 3 or 4 times just until smooth.
Pat dough into ½ inch thick round. Cut with 2 inch cutter, cutting straight down – do not twist.
Dip in oil and place in pan, edges touching.
Bake at 400 degrees for 8 to 10 minutes or until golden brown.
Makes 12 to 14 biscuits.
