Italian Salad with Classic Creamy Italian Dressing

¼ cup white wine vinegar
2 Tbsp. lemon juice
1/3 cup good quality olive oil
½ cup high quality mayonnaise
2 cloves garlic, finely minced
½ tsp. each basil, oregano, parsley, & thyme
2 tsp. honey
¼ cup parmesan cheese, finely grated
Salt and pepper to taste

1 large romaine heart, chopped
¼ head iceberg lettuce, coarsely chopped
1 rib tender celery, thinly sliced
½ small red onion, thinly sliced
½ cup cherry tomatoes
¼ cup pitted green olives, preferably Sicilian
8 pepperoncini
2 oz. Parmigiano-Reggiano cheese, shaved

In a large bowl, mash the garlic to a paste with a generous pinch of salt. Whisk together all the salad dressing ingredients. Chill until ready to serve.
(If it gets too thick, add 1 tsp water at a time until desired consistency.)
Add all of the remaining ingredients and toss well. Serve immediately.
