Garlic Herb Focaccia

¾ cup lukewarm water
2 cups white bread flour
3 Tbsp. olive oil
1¼ tsp. active dry yeast
¾ tsp. salt
3 Tbsp. olive oil
½ tsp. dried oregano
1 tsp. dried rosemary
1 tsp. minced garlic

Dissolve yeast in ¾ cup lukewarm water. Set aside. Combine bread flour and salt. Stir in olive oil and yeast mixture with a wooden spoon. Form into a soft ball and knead on a lightly floured surface. Place in a greased bowl, cover, and let rise about 30 minutes.
Grease a 9 X 13 pan with olive oil. Press dough into pan and dimple with fingers.
Let rise 45 minutes until almost doubled in size and gently re-dimple dough. Cover with topping ingredients in the order as they are listed. Sprinkle with fresh ground pepper and coarse salt to taste. Bake at 400 degrees for 20 minutes or until edges are golden brown.
