Carrot Cake

2 cups white sugar
1½ cup oil
4 eggs beaten
2 cups flour
1 tsp. soda
1 tsp. salt
3 tsp. cinnamon
3 cups shredded or grated carrots
1½ cups walnuts

Combine sugar, oil, eggs, beating until light. In a separate bowl, combine flour, soda, salt, and cinnamon. Add to egg mixture and beat until well combined. Add carrots and walnuts. Bake at 350 for about 50 minutes or until a toothpick inserted in center comes out clean. Cool before frosting.

For frosting:
¼ cup butter
8 oz. cream cheese
2 cups powdered sugar
2 tsp. vanilla

Combine butter and cheese, beating until fluffy. Add powdered sugar and vanilla.
Spread over cooled cake. Can sprinkle top with coarsely chopped walnuts.
