Toasted Rice and Pasta Pilaf

1 Tbsp. vegetable oil
¾ cup white long grain rice
2 oz. thin spaghetti, broken into 1” lengths
1 small onion, finely chopped
2 cups chicken broth
½ bay leaf
¼ cup chopped parsley
¼ cup butter, softened
1 tsp. salt
1 tsp. pepper
1/3 cup Parmesan cheese

Heat oil in heavy medium size saucepan over medium heat. Add rice and spaghetti.
Cook, stirring constantly until golden brown, 3-5 minutes. Add onion. Cook, stirring 3 more minutes.
Very carefully, add broth, butter, salt, pepper, and bay leaf. Bring to boil. Lower heat and simmer.
Cover tightly until rice is tender and broth is absorbed (about 15 minutes. Remove from heat. Discard bay leaf. Stir in Parmesan cheese and parsley. Fluff and serve.
