Blueberry Drop Biscuits

2 cups flour
1 ¼ tsp. baking powder
¼ tsp. salt
1/3 cup sugar
¼ cup shortening, chilled
¾ cup buttermilk (may need more to mix well)
1 cup fresh or frozen blueberries, if frozen do not thaw or they will turn to mush

 

Heat oven to 450 degrees.

Spray baking sheet with cooking spray.

Combine flour, baking powder, salt and sugar in a bowl.

Cut in the shortening with a pastry blender or 2 knives until crumbs are the size of peas.

Blend in just enough buttermilk with a fork until dough leaves the side of the bowl.

If needed add more milk to form a soft dough.

Gently stir in the blue berries.

Drop dough by rounded tablespoonful’s onto a baking sheet 1 to 2” apart.

Bake 8-10 minutes or until golden brown.

Serve with butter.

***Would also be good with raw sugar sprinkled over the top before baking.***
