Peanut Butter Basket Cookies

¾ cup creamy peanut butter
½ cup shortening
¾ cup sugar, divided
½ cup packed brown sugar
1 egg
2 Tbsp. milk
1 tsp. vanilla
1 1/3 cup flour
½ tsp. baking soda
½ tsp. salt
30 miniature peanut butter cups (cut in ½)
60 cake decorator candy flowers or icing to pipe on cookies
Green icing for stem and leaves

 

In a mixing bowl, cream peanut butter, shortening, ½ cup sugar and brown sugar.

Add the egg, milk and vanilla; mix well. 

Combine the flour, baking soda and salt, add to the cream mixture and mix well. 

Shape into 1” balls. 

Roll in remaining ¼ cup sugar; place on ungreased cookie sheets. 

Bake at 350 degrees for 10-12 minutes or until lightly browned. 

Remove from oven and let cool completely. 

After cooled take ½ of peanut butter cup, spread some light corn syrup on cut side and place cut side onto cookie to form a basket. 

Pipe a green line for the stem up from the basket; put a dot at the top of the stem to attach flower to, or pipe flower at this time. 

Pipe on leaves right above the peanut butter cup “basket”. 

Let set before storing in an air-tight container. 

Yields: approximately 5 dozen
