Cinnamon Roll Pancakes

Pancake Mix (follow directions on package or make from scratch—recipe included for Quick & Easy Buttermilk Pancakes)

For the Cinnamon Filling:

½ cup brown sugar

1 tsp. cinnamon

2 Tbsp. melted butter

Milk (as needed)


For the Cream Cheese Frosting:

¼ cup butter, softened

4 oz. cream cheese, softened

1 ½ tsp. milk

½ tsp. vanilla

1 ½ cups powdered sugar


To make the Cinnamon Filling:

Mix the melted butter, brown sugar and cinnamon. Put in a squeeze bottle if you have one, if not you can drizzle with a spoon or put into a Ziploc bag and cut the corner off to pipe. If it seems too thick, thin with a splash of milk (you don’t want it to be too runny).


To make the Cream Cheese Frosting:

Mix all ingredients in a bowl until smooth. Spread or pipe over warm pancakes.

Make pancake batter. Pour batter on your griddle. Immediately swirl on some of the sugar mixture. When pancakes are bubbly, turn and cook as you would any other pancake. Top with maple syrup or frosting (as you would a cinnamon roll). Enjoy!
