Turkey Tetrazzini

10 oz. spaghetti, broken
¼ cup butter or margarine
½ cup all-purpose flour
2 ¾ cup chicken or turkey broth
1 cup cream
¼ cup dry cooking sherry, optional
1 clove garlic, diced
Onion to taste (George uses green onions when possible)
1 tsp. salt
Dash of pepper
1 (6 oz.) can sliced mushrooms, drained
¼ cup green pepper or 1 small hot pepper, chopped, optional
2 cups diced turkey or chicken
½ cup to 2 cups shredded Mozzarella cheese


Cook spaghetti in boiling salted water until just done; do not overcook. Drain. 

Melt butter or margarine; blend in flour. Stir broth into flour mixture. Add cream. 

Cook and stir until mixture thickens and bubbles. 

Add wine, salt, pepper, drained spaghetti, mushrooms, pepper and cooked chicken or turkey. 

Spread in a 9×13 inch glass baking dish and top with mozzarella cheese.

Bake at 350 degrees for 30 minutes or until heated through.
