Quick & Easy Buttermilk Pancakes

2 cups all-purpose flour

2 Tbsp. sugar

2 tsp. baking powder

1 tsp. soda

½ tsp. salt

2 eggs

2 cups buttermilk

¼ cup oil or melted margarine

Stir dry ingredients together and set aside. Beat eggs slightly, add buttermilk and oil. Add this mixture to dry ingredients and stir gently just until blended. Heat nonstick griddle until hot. Brush very lightly with oil. Pour butter onto griddle (about 1/3 cup). When tops bubble (about 2-3 minutes), turn and bake about 2 minutes longer. Serve at once or place in 200 degree oven until all pancakes are done.

TIP: Dry ingredients may be measured, combined and stored in a plastic bag or a jar for a quick and easy breakfast. Freeze and package any leftovers. Reheat on low in microwave.
