Pasta with Broccoli
1 pound broccoli
¼ cup olive oil
3 cloves garlic, halved
1 Tbsp. minced fresh parsley
½ tsp. salt
¼ tsp. freshly ground black pepper
1 lb. penne pasta, cooked al dente and drained
¼ cup freshly grated Parmesan cheese
Trim off and discard ends of broccoli stems. Cut off flowerets and chop stems.
Cook broccoli in boiling, salted water until tender, about 8 – 10 minutes. Drain well.
In a large skillet, heat olive oil and sauté garlic until golden. Discard garlic. Add broccoli, parsley, salt and pepper. Sauté for 2 minutes. In heated serving dish, toss warm pasta with broccoli mixture.
Sprinkle with Parmesan and serve immediately.
