Saucy Sirloin

2 Tbsp. butter
1 cup finely chopped green onions, including tops
2 Tbsp. finely chopped shallots (optional)
½ bay leaf, crumbled
1 tsp. minced fresh thyme or ½ tsp dried thyme
1½ cups dry red wine
1 3½ lb. boneless beef sirloin steak 1½” thick
2 Tbsp. butter
3 Tbsp. fresh parsley
1 Tbsp. fresh lemon juice
1 Tbsp. all-purpose flour

In large, heavy skillet, melt 2 Tbsp. butter over high heat. Sauté onions, shallots, bay leaf and thyme until onions are transparent, about 2-3 minutes. Add wine and cook until reduced by 1/3.
Remove sauce from skillet and reserve. In skillet over high heat, sear steak for 3 minutes per side.
Turn heat to medium and let skillet cool slightly; add sauce, remaining 2 Tbsp. butter, parsley, lemon juice and flour. Cook for an additional 2-4 minutes per side, depending on taste.
Cut steak in 2 inch diagonal strips and serve with red wine sauce from skillet.
