Silver Spur Ranch Blue Cheese Burgers

2 pounds lean ground beef
3 oz. blue cheese, crumbled
1/3 cup chopped fresh chives or green onions
½ tsp. hot pepper sauce
1 tsp. Worcestershire sauce
¾ tsp. coarsely ground black pepper
1 tsp. salt
1 tsp. dry mustard
6 rolls or buns, toasted
In a large bowl, mix ground beef, blue cheese, chives, hot pepper sauce, Worcestershire sauce, black pepper, salt, and mustard. Form mixture into 6 burgers. Cover and refrigerate for at least 2 hours or overnight.
Preheat grill or broiler. Cook burgers 5 to 6 minutes per side or until cooked to desired doneness. Serve on toasted rolls or buns.
