05/16/2016 Shrimp Alfredo

½ cup butter
1 lb. medium shrimp, peeled & deveined
1 Tbsp. minced green onions
½ tsp. minced garlic
9 oz. fettucine, cooked al dente & drained
4 egg yolks
1 cup half and half
1 cup freshly grated Parmesan cheese
2 tsp. minced fresh parsley
½ tsp. salt
¼ tsp. freshly ground black pepper
In large skillet, melt butter and sauté shrimp, green onions, and garlic over moderate heat for 3-4 minutes, or until shrimp are firm and opaque. Remove pan from heat.
Stir warm fettucine into shrimp mixture.
In medium bowl, beat egg yolks, half and half, and Parmesan.
Add egg yolk mixture to shrimp mixture and cook over moderate heat until sauce thickens, about 3-4 minutes. Do not boil. Stir in parsley, salt, and pepper. Serve immediately.
