05/20/2013 Potato Salad
5 lbs. potatoes, cooked and cubed
8 hard-boiled eggs, cooked & diced
½ cup onions, diced
½ cup celery, diced
**Can put onions and celery in a blender with a little milk and make a puree if you don’t like chunks of the onion and celery.**
Mix potatoes, eggs, onions and celery in a large bowl. Set aside.
In a medium sized bowl combine the following:
1 ½ cups salad dressing or Miracle Whip
1/3 cup heavy cream
¼ cup sugar
2 Tbsp. vinegar
2 Tbsp. mustard (prepared)
1 ½ tsp. salt
½ tsp. pepper
Mix well and pour over potatoes and egg mixture. Stir until well blended. Refrigerate 2-3 hours before serving. May garnish with additional sliced eggs.
