Garden Salad with Vinaigrette

1 tsp. Dijon mustard
1 tsp. minced fresh garlic
3 Tbsp. champagne vinegar
Kosher salt and freshly ground black pepper
½ cup good quality olive oil
Salad greens or mesclun mix for 6-8 people
1 small red onion, thinly sliced
2-3 plum tomatoes, cored and cut into small wedges
1 cucumber, peeled and sliced
Croutons (optional)

In a small bowl, whisk together the mustard, garlic, vinegar, 1 teaspoon salt, and ½ teaspoon pepper. While whisking, slowly add the olive oil until the vinaigrette is emulsified. Arrange lettuce on serving plate, and drizzle with some of the dressing. Arrange red onion, tomatoes, cucumber and croutons on top of lettuce. Drizzle with remaining dressing.
