Prime Rib Roast

Start with your roast at room temperature. Place it in a large roaster (stainless steel or enamel) with the fatty side up.
Season with seasoning salt and pepper. (You want to be able to see the seasoning salt on the roast. It should have an orange hue.) Let sit for 30 minutes or longer.
Preheat oven to 500 degrees.
Place roaster in oven for 20 minutes. After the 20 minutes reduce the heat to 325 degrees and continue roasting for an additional 60 to 75 minutes (or 15 minutes per pound). The internal temperature of the roast should be at 135 degrees for medium rare.
Take the roast out of the oven, cover with foil and let rest for 15 minutes before carving so that the meat can retain its juices.
Slice and serve with Au jus.
