Some Like It Hot Cornbread

1 cup yellow cornmeal
¾ cup all-purpose flour
3 Tbs sugar
2 tsp baking powder
¼ tsp chili powder
Pinch of cayenne pepper (optional)
2 Tbs butter or margarine
¾ cup milk
1 large egg white
2 Tbs canned mild green chilis, drained
3 Tbs chopped sweet red bell peppers
Preheat oven to 400. Spray an 8 X 8 baking pan with vegetable spray. In a medium bowl, mix the cornmeal, flour, sugar, baking powder, chili powder, and cayenne pepper.
With a fork, cut in the butter until the mixture resembles coarse meal. Add the milk, egg white, chili peppers, and red pepper. Stir well but don’t over mix. Put mix in prepared pan. Bake for 17 minutes or until top is lightly browned and a toothpick in the center comes out clean.
