¼ cup butter
¼ cup olive oil
¼ cup finely chopped green onions
1 Tbsp. minced garlic
Juice of one lemon (3 Tbsp.)
2 lbs. boneless, skinless chicken breasts
1 tsp. salt
½ tsp. freshly ground black pepper
¼ cup minced fresh parsley
1 tomato, chopped
Buttered noodles or cooked rice
Cut chicken into ½ inch pieces.
In skillet, heat together butter and olive oil and sauté green onions and garlic.
Add lemon juice, chicken salt, pepper, and parsley.
Continue cooking, stirring constantly, for 15 minutes or until chicken is done.
Add tomatoes and heat through. Serve over buttered noodles or hot rice.
