1 cup all-purpose flour
1 cup milk
½ tsp. salt
Heat oven to 450. Generously grease six 6 ounce muffin cups or popover pan.
Beat eggs slightly; beat in flour, milk and salt just until smooth. Do not overbeat.
Fill cups about three quarters full. Bake 15 minutes. Decrease oven temperature to 350. Bake for an additional 15 to 20 minutes. Remove from cups immediately.
Serve hot with butter. Can serve with savory butter, such as garlic butter (1/2 cup butter & 1 Tbs minced garlic) or honey butter (1/2 cup butter, ½ cup honey, ½ cup powdered sugar, ¼ tsp cinnamon).
