Blueberry Spinach Salad

1 lb. fresh spinach or Bibb lettuce
1½ cups fresh blueberries
4 oz. crumbled bleu cheese
2/3 cup toasted pecans or walnuts

For dressing:
½ cup vegetable oil
3 Tbsp. blueberry, white wine, or raspberry vinegar
1 tsp Dijon mustard
1 tsp sugar
Salt and pepper to taste

Combine torn, dried greens, blueberries, bleu cheese, and nuts in a salad bowl.
Combine dressing ingredients and refrigerate. Just before serving, toss greens gently with dressing.
