Pike’s Peak Potatoes

1½ lbs. new potatoes, unpeeled                    
Salt and freshly ground black pepper to taste 
¾ cup heavy cream
½ cup chicken broth
1 cup shredded Swiss cheese

Slice potatoes and place in greased 9 X 9 baking dish. Sprinkle with salt and pepper. Mix cream with broth and pour over potatoes. Cover and bake at 350 degrees for 30 minutes. Uncover and bake for another 30 minutes. Sprinkle with cheese and return to oven until cheese is melted. (recipe can easily be doubled)
