Creamy Cheesy Mashed Potatoes

6 medium (2 lbs.) red potatoes
¼ cup butter
1/2 cup sour cream
¼ cup milk
Salt and pepper to taste
1 cup cheddar cheese, shredded

Peel potatoes and cut into quarters. Boil in water until just tender. Drain.

Add the butter, sour cream, milk, salt and pepper and whip with electric mixer.

Put in microwavable serving bowl and sprinkle cheese on top.

Microwave for one minute or until cheese is melted.
