Sliced Baked Potatoes

6 medium sized white baking potatoes
1½ tsp. salt and freshly ground pepper to taste
6 Tbsp. melted butter
6 Tbsp. chopped chives or parsley
3 tsp. dried herbs of your choice (thyme, sage, etc.)
½ cup grated Parmesan cheese
1½ cups grated cheddar cheese

Scrub potatoes well. Cut into thin slices, but not all the way through. Lay a wooden spoon directly in front of the potato you are cutting to guard against the knife cutting all the way through.
Put potatoes in baking dish and fan them apart slightly.
Sprinkle with salt and pepper, then drizzle with butter and sprinkle with herbs.
Bake at 425 for about 45-50 minutes. Remove from oven. Sprinkle with cheeses.
Bake for another 10-15 minutes or until lightly browned. Check for doneness with a fork.
