Chicken Ranch Pasta

4 slices bacon, diced
2 cloves garlic, minced
2 cups chicken broth
1 cup milk or more as needed
1½ cups diced chicken
8 oz. rotini pasta
1 (1 oz.) package Ranch Seasoning & Salad Dressing Mix
Kosher salt and freshly ground black pepper to taste
1 cup shredded cheddar cheese
2 Tbsp. fresh parsley chopped

Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy.
Drain excess fat, reserving 1 tablespoon in the skillet. Transfer bacon to paper towel lined plate.
Add garlic to the skillet and cook, stirring frequently until fragrant, about 1-2 minutes.
Stir in chicken broth, milk, chicken, pasta, and Ranch Seasoning; season with salt and pepper.
Bring to a boil; reduce heat and simmer, stirring occasionally, until pasta is cooked through, about 15-16 minutes. If the mixture is too thick, add more milk as needed until desired consistency is reached.
Remove from heat and top with cheese. Cover until cheese has melted, about 2 minutes.
Garnish with bacon and parsley. Serve immediately.
