Million Dollar Rice

3 cups chicken broth                           
1 cup wild rice                                   
5 Tbsp. butter, divided
½ lb. fresh Shiitake mushrooms, stems trimmed
Salt and freshly ground black pepper to taste

In medium saucepan, heat broth and rice to boiling. Reduce heat to low, cover and simmer 45 minutes. Drain rice well and transfer to 2-quart baking dish. Stir in 2 tablespoons butter and set aside.

In large skillet, melt remaining 3 tablespoons butter over medium-high heat. Add mushrooms and sauté 4 minutes or until tender. Stir mushrooms into rice. Season with salt and pepper.

Cover baking dish and bake at 250 degrees for 20 minutes.
