Charred Chicken and Tomato Tacos

1 lb. plum tomatoes (store bough are best; garden are not firm enough)
2 tsp. extra virgin olive oil
1 lb. chicken breast, cut into bite sized pieces
Salt & pepper, to taste
1 large onion
2 cloves garlic
2 medium jalapeno peppers
2 Tbsp. lime juice
2 Tbsp. fresh cilantro
4 medium green onions
12 tortillas, medium size
Sour cream


Heat skillet and place the tomatoes in the skillet and turn occasionally until charred on all sides.

Transfer to plate and chop into smaller pieces (can remove seeds if you want).


Add 1 tsp. of the oil to the same pan and heat on high; add chicken and season with salt and pepper.

Cook stirring occasionally until browned on all sides. When fully cooked transfer to plate.


Reduce heat to medium; add 1 tsp. oil and chopped onions; cook until softened. Add garlic and jalapenos, cook 1 minute; add lime juice, chicken and tomatoes.

Bring to a simmer and stir in cilantro and green onions.


Remove from heat and spoon into tortillas. Add some sour cream on top.
