08/19/2013 Cashew Chicken Over Rice or Noodles

2 boneless, skinless chicken breasts, cut into strips
1 Tbsp oil
2 green onions, chopped
1 large carrot, sliced
1/2 celery stalk, sliced
Broccoli, chopped
1/2 cup cashews
 
Sauce:
1/2 cup orange juice
1/4 cup honey
1/4 cup soy sauce
1 Tbsp cornstarch
1 tsp ground ginger
1 tsp garlic powder
1/2 tsp pepper
 
Stir-fry chicken strips in oil until brown and tender.
Cook the vegetables for a few minutes before adding them to the chicken.
Add cashews and the ingredients for the sauce and let simmer until the sauce is thickened.
Serve over rice or noodles.
