Watermelon Noodles (aka Lazy Man Strudels)

2 cups flour
2 tsp. baking powder
1 tsp. salt
¾ cup milk (may need a little more)
4 or 5 medium potatoes
Small onion
2 Tbsp. butter
2 cups heavy whipping cream

 

Mix these 4 ingredients together to form a soft dough.

Roll a small amount of dough into a log.

Place on cookie sheet, continue making logs (3-4” long) until all the dough is rolled.

Cover cookie sheet so they do not dry out.

Peel and thinly slice the potatoes and dice the onion.

Melt the butter in an electric skillet heated to 350 degrees; add the potatoes and onions to the skillet and then place the dough logs on top.

Pour the heavy whipping cream on top of all and cover with lid.

Cook for 20 to 25 minutes until you smell them frying slightly and hear them cooking.

DO NOT OPEN THE COVER!

 

Note: You may have to adjust the heat back and forth between 300-350 degrees to prevent them from burning.
