Spinach Salad with Berries and Honey Balsamic Vinaigrette

Salad:
1 bunch spinach, washed and stemmed          
½ cup feta cheese                              
3 green onions sliced
1 cup strawberries, stemmed and sliced
1 cup blueberries

Combine all salad ingredients. Set aside.                                    

Candied walnuts:
1 cup walnuts                                              
¼ cup sugar
1 Tbsp. butter

Heat a medium non-stick skillet over medium heat, add 1 cup walnuts, ¼ cup granulated sugar and 1 Tbsp. butter. Heat for five minutes, stirring frequently so mixture doesn’t burn. When the sugar mixture starts melting, stir constantly until all sugar is melted and nuts are coated.
Transfer immediately onto a sheet of parchment paper and separate the nuts right away using two spatulas.

Dressing:
¼ cup balsamic vinegar                                
2 Tbsp. honey                                     
½ cup olive oil
Salt and pepper to taste

In blender or using electric mixer, combine balsamic vinegar and honey. Slowly add olive oil while blending. Add salt and pepper to taste.
