Rhubarb Butter Crunch

2 ½ cups flour
1 1/2 cups oatmeal
1 1/2 cups brown sugar
1 cup butter
1 teaspoon vanilla
3 1/2 cups rhubarb, diced
1 1/2 cups sugar
1/4 – 1/2 cup flour
pinch of salt

Mix flour, oatmeal, sugar, butter, and vanilla until crumbly.

Press half of mixture in a greased and floured 9 X 13 pan

Mix rhubarb, sugar, flour, and salt together.

Pour on crust and crumble remaining mixture on top.

Bake 45 minutes – 1 hour at 375 or until golden brown.

Serve warm with ice cream or cooled as bars.
