09/21/2015 Roasted Vegetables

Cut assorted vegetables in small chunks (summer squash, zucchini, carrots, red onion, peppers, beans, pea pods, etc.) and lay flat in single layer on baking sheet.
Drizzle with olive oil and season with sea salt and pepper to taste.
Bake at 400 degrees for 25-30 minutes until tender.
