Raw Apple Cake

2 cups sugar
1/2 cup oil
2 eggs
1 tsp. vanilla
2 cups flour
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. salt
4 cups finely chopped apples
1/2 to 1 cup chopped walnuts (optional)                              

Topping:

½ cup chopped nuts
1/4 cup white sugar
1/4 cup packed brown sugar
1 tsp. cinnamon

 

Cream together sugar, oil, eggs, and vanilla.

Beat in flour, baking soda, cinnamon, and salt.

Add apples and (if desired) the nuts.

Pour into a greased 9 X 13 inch cake pan.

Toss topping ingredients together and sprinkle over the cake batter.

Bake in preheated 350 degree oven 45 – 50 minutes.
