3 cups cooked wild rice (see below)
8 oz. fresh mushrooms, sliced
1 can French onion soup
1/3 cup chopped celery
¼ cup chopped sweet red pepper
1/3 cup chopped onion
1 clove garlic, minced
¼ cup butter, melted
½ cup slivered almonds
½ cup shredded jack cheese
Salt and pepper to taste
To prepare the wild rice, use the can of French onion soup and water so that the two combined total the amount of liquid required on the package of wild rice.
In a medium size skillet, sauté the mushrooms, onion, celery, red pepper, and garlic in butter until vegetables are tender.
In a 2 quart casserole, combine the cooked wild rice, vegetable mixture, almonds, cheese, salt and pepper.
Cover and bake in 325 degree oven for 35-40 minutes. Serves 6 – 8.
