Broccoli Cheese Soup

2 Tbsp. butter
2 Tbsp. all-purpose flour
½ cup chopped yellow or white onion
1 cup half and half
1 (16 oz.) pkg. frozen chopped broccoli
1 (16 oz.) loaf of processed cheese (Velveeta or store brand)
2 (14.5 oz.) cans low-sodium chicken broth
1 cup shredded carrots
2 cups shredded cheddar cheese
Salt and pepper, to taste

In a large saucepan, melt the butter.

Stir in the flour and onions.

Cook for about a minute, then slowly add the half and half, whisking until thickened and smooth.

When all the half and half is incorporated, add the broccoli and processed cheese, stirring until completely melted.

Add the chicken broth, stirring until the soup is well mixed.

Simmer for about 10 minutes.

Stir in the cheddar cheese and cook for another 10 minutes.

Season with salt and pepper.

Let heat until the cheese is fully melted and incorporated.
