Wild Rice Soup

7 Tbsp butter
2 Tbsp dry onion
1/2 cup plus 2 Tbsp flour
2 cans chicken broth
2 cans or 2 cups wild rice, cooked
1/2 cup diced ham
2/3 cups shredded carrots
4 Tbsp slivered almonds
2 1/3 cups cup cream
2 Tbsp white wine
Salt and pepper to taste
Parsley or chives, optional

Melt butter and saute onion until tender in pan.

Blend in flour and gradually add broth.

Cook, shirring constantly until mixture comes to a boil.

Boil for 1 minute. Stir in rice, ham, carrots and almonds.

Simmer for 5 minutes.

Blend in cream and wine.

Heat to serving temperature.

Garnish as desired.
