Balsamic Root Vegetables

1 lb. red potato, peeled, cut into 1½ inch pieces
1 lb. carrots, cut into 1½ inch pieces
2 large red onions, coarsely chopped
¾ cup sweetened dried cranberries
1½ lb. sweet potatoes, peeled, cut into 1½ inch pieces
3 Tbsp. olive oil
2 Tbsp. balsamic vinegar
1 Tbsp. packed light brown sugar
1 tsp. salt
½ tsp. freshly ground pepper
1/3 cup chopped fresh parsley

Spray baking dish with cooking spray. Stir together potato, carrots, onions, and cranberries. Top with sweet potatoes. In a small bowl, stir together oil, vinegar, brown sugar, salt and pepper with a whisk;
Pour over vegetables. Do not stir. Cover and bake for one hour or until vegetables are tender.
Sprinkle with parsley before serving.
