Buttercup Squash with Apples and Cranberries

2 buttercup squash
2 apples peeled and chopped
½ cup dried cranberries
½ cup walnuts, chopped (optional)
2 Tbsp. butter
4 Tbsp. honey
1 tsp. cinnamon
Salt and pepper to taste
Preheat oven to 350 degrees. Wash squash and cut in half. Remove seeds and pulp.
Pour ¼ cup water into a baking dish and add squash, cut side down. Bake for 30 minutes.
In a large mixing bowl, combine apples, cranberries, and walnuts. In a small saucepan, combine butter, honey, cinnamon, salt and pepper. Baste the squash with a pastry brush and fill with the apple mixture. Baste mixture. Return to oven and bake for an additional 30 minutes or until tender.
