Cranberry Christmas Cake

3 eggs
2 cups sugar
¾ cup butter softened
1 tsp. vanilla
2 cups all-purpose flour
12 oz. fresh cranberries

Preheat oven to 350. With mixer, beat the eggs with the sugar until slightly thickened and light in color, about 5 – 7 minutes. Mixture should double in size. Mixture should form a ribbon when you lift beaters out. Add butter and vanilla and mix 2 more minutes. Stir in flour just until combined. Add cranberries and stir to mix. Spread in 9 X 13 pan. Bake 40 – 50 minutes or until lightly browned and toothpick comes out clean. Let cool completely and cut into squares.
