Orange-Cranberry Tossed Salad

1 head lettuce washed and torn
1 cup dried, sweetened cranberries
1 can (11oz.) mandarin oranges
3 green onions sliced

Dressing:
3 Tbsp. orange juice
2 Tbsp. cider vinegar
2 Tbsp. honey
1 tsp. poppy seeds
1 tsp. ground mustard
Salt & pepper to taste
¾ cup canola oil

Combine lettuce, oranges, cranberries, green onions and set aside.
Combine orange juice, vinegar, honey, poppy seeds, mustard, salt and pepper. Slowly add canola oil, whisking constantly or using a blender. Toss dressing with salad before serving.
